&lt;p&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;/p&gt;

&lt;li&gt;Heat oil and butter together in a pot, add onions and garlic then fry until transparent.&lt;/li&gt;
&lt;li&gt;Add minced meat and all of the spices to the pot.&lt;/li&gt;
&lt;li&gt;Let the mince and spices cook for about 20 – 30 min until water disappears.&lt;/li&gt;
&lt;li&gt;Let the bread soak in milk for a few minutes. Squeeze bread from milk and crumble bread into mince mixture.&lt;/li&gt;
&lt;li&gt;Add chutney, sugar and sultanas to the mince.&lt;/li&gt;
&lt;li&gt;Place the mixture in an ovenproof baking dish.&lt;/li&gt;
&lt;li&gt;Mix eggs into milk used for soaking the bread.&lt;/li&gt;
&lt;li&gt;Pour milk and egg mixture over mince in the baking dish.&lt;/li&gt;
&lt;li&gt;Bake for ± 40mins at 180 Degrees Celsius.&lt;/li&gt;

&lt;p&gt;100ml Pure honey&lt;/p&gt;

&lt;li&gt;Preheat oven to 180 Degrees Celsius.&lt;/li&gt;
&lt;li&gt;Add all ingredients to an oven dish.&lt;/li&gt;
&lt;li&gt;Place in the oven and bake for ±40mins until soft, tender, crispy and nutty.&lt;/li&gt;
&lt;li&gt;OPTIONAL: You can add rosemary sprigs to this dish if you're pairing it with a Sunday roast.&lt;/li&gt;

&lt;p&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;½ Cup butter (Soft)&lt;/p&gt;
&lt;p&gt;1 Cup white sugar&lt;/p&gt;
&lt;p&gt;2 Eggs at room temperature&lt;/p&gt;
&lt;p&gt;1tbs Grated orange zest&lt;/p&gt;
&lt;p&gt;1 Cup fresh orange juice&lt;/p&gt;
&lt;p&gt;2 Cups all purpose flour&lt;/p&gt;
&lt;p&gt;2 Teaspoons baking powder&lt;/p&gt;
&lt;p&gt;½ Teaspoon salt&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Sauce&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;½ Cup orange juice&lt;/p&gt;
&lt;p&gt;¼ Cup white sugar&lt;/p&gt;
&lt;p&gt;2 tbs Butter&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;/p&gt;

&lt;li&gt;Sift together flour, baking powder and salt.&lt;/li&gt;
&lt;li&gt;Beat butter and sugar with a hand mixer until soft and fluffy.&lt;/li&gt;
&lt;li&gt;Add eggs one at a time and mix after each addition.&lt;/li&gt;
&lt;li&gt;Add orange zest and ½ of the orange juice.&lt;/li&gt;
&lt;li&gt;Gently fold in the flour mixture.&lt;/li&gt;
&lt;li&gt;Turn the batter into a greased loaf pan.&lt;/li&gt;
&lt;li&gt;Bake at 175 Degrees Celsius for 60mins.&lt;/li&gt;
&lt;li&gt;Once out of the oven place all of the sauce ingredients into a saucepan and stir over heat until sugar has dissolved. &lt;/li&gt;
&lt;li&gt;Poke small holes into loaf and pour sauce over.&lt;/li&gt;

&lt;p&gt;First things first, for those who aren’t familiar with De Akker, let’s say that not much good happens after midnight - especially when one considers the generous bartenders of this popular student joint. For Jocelyn though, De Akker in Dorp Street was where she met her husband Nicholas Wilson all those years ago. One could go as far as saying that it played a role in where she is today. You see, Nick was on his way out and in walked Jocelyn and - you guessed it - it was love at first sight. Nick, having returned from his studies in the UK and a brief sojourn in Johannesburg, was farming on their family farm, Dwarsrivershoek - just down the road from De Zeven.&lt;/p&gt;
&lt;h2&gt;Longing And Long Distancing&lt;/h2&gt;
&lt;p&gt;After graduating in 2004 with a BSc in Viticulture and Oenology, Jocelyn went over to Australia, intending to go to France for the second half of the year. Yet after spending probably all her salary on phone calls, she knew that Nick was the one. In mid-2005, she moved back to Stellenbosch and started looking for job opportunities here instead - and we’re so glad that she did!&lt;/p&gt;
&lt;p&gt;&lt;img class="aligncenter" src="/media/cache/44/2b/442bd2d0ceaa65124a2777dbdbc07bb8.jpg" alt="" /&gt;&lt;/p&gt;
&lt;h2&gt;Setting Roots In The Banhoek Valley&lt;/h2&gt;
&lt;p&gt;It wasn’t long before Jocelyn and Nick said their “I do’s” on the lawn at Dwarsriviershoek, and it was a dreamy autumnal affair - worthy of a place on a Pinterest board we think! At this stage Nicholas was also farming, packing plums and pears and looking to diversify into protea production. Jocelyn – not one to be left out – swapped vineyards for proteas and got herself involved with planting.&lt;/p&gt;
&lt;p&gt;&lt;img class="alignleft" src="/media/cache/e5/2a/e52aca6ea36aae8ce48326a1f7be9500.jpg" alt="" /&gt;&lt;/p&gt;
&lt;h2&gt;Throwing Caution To The Wind&lt;/h2&gt;
&lt;p&gt;Planting proteas in the microclimate of the Banhoek Valley meant that Jocelyn could put her degree to good use. She also learnt&lt;em&gt; “to throw caution to the wind”&lt;/em&gt; after taking her first job at Flagstone in Somerset West as assistant winemaker. Back then, it was family-owned and &lt;em&gt;“a new wave of wine at that stage. They were the guys playing with unusual, interesting varietals, trying different things, where everyone else was more traditional, trying to make more French-style wines. It was a great place to start.”&lt;/em&gt;&lt;/p&gt;
&lt;h2&gt;The La Bri Days&lt;/h2&gt;
&lt;p&gt;And then came along an incredible job opportunity as General Manager and Winemaker at La Bri in Franschhoek, so enticing that she &lt;em&gt;“simply had to take it! It was fully holistic, 25 hectares of vineyards and to have the opportunity as a winemaker, to design your own cellar to your specifications, and to have your own dedicated tank for each block is pretty special!” &lt;/em&gt;&lt;/p&gt;
&lt;h2&gt;The Real Jocelyn Hogan Wilson&lt;/h2&gt;
&lt;p&gt;While she didn’t realise it yet, Jocelyn was about to embark on the greatest life - and wine - journey of them all. Something no cellar hand experience could impart, and certainly nothing a degree could teach. She had two children before the age of 30 while running La Bri and breastfeeding in between pressing grapes - just let that sink in for a minute. This is testament to who Jocelyn is, an absolute go-getter who won’t let anything slow her down. &lt;/p&gt;

&lt;p&gt;You could argue that motherhood shares many similarities with winemaking. You need to be patient, give as much love and attention as you can, and you never really know how everything will turn out or ‘mature.’ You also need to judge when to intervene and when to just let nature take its course. We like to think that motherhood is what has made Jocelyn the remarkable woman she is today. So while she did take a sabbatical between 2010 and 2014, she didn’t lose her winemaking touch. If anything, she got better at it!&lt;/p&gt;
&lt;h2&gt;Old Chenin Bush Vines And The New Winemaker On the Block&lt;/h2&gt;
&lt;p&gt;&lt;img class="alignleft" src="/media/cache/8c/42/8c4286dc61b5eb7ef23407ddb153be3f.jpg" alt="" /&gt;&lt;em&gt;“It was always on the back burner that I’d have my own brand, but I hadn’t properly conceptualised or predicted that it would happen so soon.” &lt;/em&gt;&lt;/p&gt;
&lt;p&gt;In 2014 Jocelyn tried a tiny bit of Chenin blanc sourced from 42-year-old bush vines with granite soils in the Swartland. Jocelyn reflects, &lt;em&gt;“it was always going to be Chenin for me. It’s our best foot forward for South Africa. It’s our most planted grape, and it’s so versatile. It can be planted on so many different soil types and various micro-climates that you can really express your style of winemaking too through Chenin blanc. My Chenin is grown on granite soils, and what I like about granite is that it produces a Chenin that is so expressive of site. It has lovely citrus and floral components and is quite crystalline - very true.” &lt;/em&gt;&lt;/p&gt;
&lt;p&gt;Just as one would expect after meeting Jocelyn, she made no mention of the awards her &lt;a href="https://hoganwines.co.za/product/hogan-chenin-blanc-2017" target="_blank" rel="noopener"&gt;Chenin&lt;/a&gt; has won. Only after our interview did we find that her 2017 Chenin won Gold at the Old Mutual Trophy Wine Show in 2020, along with many noticeable high scores from the likes of Tim Atkin, Christian Eedes, Anthony Mueller and Neal Martin.&lt;/p&gt;
&lt;h2&gt;Serge Hochar And His Giving Nature to Inspire Others&lt;/h2&gt;
&lt;p&gt;Then came along the SA Swartland Revolution tasting in 2014, where Jocelyn sat through a tasting with esteemed Lebanese winemaker Serge Hochar from Chateau Musar. Completely in awe of his winemaking style and vibrant personality, Jocelyn said, &lt;em&gt;“Part of my journey was all about hearing him. He literally got up. Did not speak about his incredible wines in front of us and just told stories of his life, restaurants he’s eaten at, places he’s travelled to, along with many jokes. He was phenomenal. You know, we are so serious about our tasting, and he brought this romantic human side on how to do things, and you know I just loved that about him. &lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;Right at the end of his tasting, he discloses that his blend is Cabernet Sauvignon, Cinsault, and Carignan. I was like, that’s crazy because ten years prior to this, a family friend had been telling me about Carignan and how well it grows in SA. And now I’ve met Serge, and I had these divergent paths coming in and influencing my journey.”&lt;/em&gt;&lt;/p&gt;

&lt;p&gt;If you hadn’t guessed it already, Jocelyn’s 2015 red was called the “&lt;a href="https://hoganwines.co.za/product/hogan-divergent-2018" target="_blank" rel="noopener"&gt;Divergent Red&lt;/a&gt;” inspired by Serge’s classic blend of Carignan, Cinsault and Cabernet Sauvignon. Sadly a month after the tasting, Serge passed away, prompting Jocelyn to reach out to his family in London and tell them about her &lt;em&gt;“revolutionary meeting.”&lt;/em&gt; She asked if they would mind if she paid homage to their father on the back of the label and tell the world about how he inspired her. &lt;em&gt;“They didn’t respond for about two or three weeks, and I started to worry that perhaps it was inappropriate or too soon. Luckily, they wrote back and said ‘yes.’”&lt;/em&gt;&lt;/p&gt;
&lt;h2&gt;‘The Galvanised’ Chardonnay&lt;/h2&gt;
&lt;p&gt;2018 was the year &lt;a href="https://hoganwines.co.za/product/hogan-the-galvanised-chardonnay-2019-case" target="_blank" rel="noopener"&gt;Chardonnay&lt;/a&gt; was added to the Hogan Wines range.&lt;/p&gt;
&lt;p&gt;Some of the grapes came from the Banhoek Valley, while the first harvest included grapes from Elandskloof in Villiersdorp and Polkadraai, Stellenbosch. Jocelyn sourced 70% of the grapes from the Banhoek Valley and 30% from the Helderberg in her subsequent harvest. &lt;/p&gt;
&lt;p&gt;&lt;img class="alignleft" src="/media/cache/59/d0/59d0b0e92634e70943972c8ff4743641.jpg" alt="" /&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;“Banhoek is phenomenal as a Chardonnay region - with us being a little bit cooler. I find that at one time, we could be up to 5 degrees cooler than Stellenbosch. We also get more rain (sometimes a huge difference).” &lt;/em&gt;&lt;/p&gt;
&lt;p&gt;Jocelyn’s winemaking style or guiding principle is that each bottle of wine should contain the unique story of its vintage. These stories also extend to the names of each bottle, with song lyrics used as her personal touch to each bottle. Therefore, when it comes to this Chardonnay, the Chemical Brothers 2005 hit 'Galvanize' was the inspiration and song played during harvest to uplift on some of the longer harvest days, with lines like, “don’t hold back” and “put apprehension on the back burner, let it sit” – we’re sure you get this gist. It was also named after the careful selection of grapes from different regions to energise this blend and ultimately galvanise it.&lt;/p&gt;
&lt;h2&gt;‘Mirror For The Sun’ Cabernet Franc &lt;/h2&gt;
&lt;p&gt;&lt;em style="font-variant-ligatures: normal; font-variant-caps: normal; font-weight: 400; font-size: 13px; font-family: Helvetica, Arial, sans-serif;"&gt;&lt;img class="alignleft" src="/media/cache/5b/3b/5b3b551f17019d3dcfb25a9ad3bcd5ed.jpg" alt="" /&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;In 2018 Jocelyn also added her ‘Mirror For The Sun Cabernet Franc.’ &lt;em&gt;“I played around with a  site just below Somerset College in Somerset West on the lower Helderberg region, in an incredible Cabernet Franc area. I created something I like to call Ballerina style Cab Franc with delicate pure red fruit. It’s all about subtlety and redness.” &lt;/em&gt;&lt;/p&gt;
&lt;p&gt;So if you consider yourself a Red Hot Chili Peppers fan, you’ll know that this Cab Franc was named after ‘Roadtripping.’ 'Mirror For The Sun’ reflects on how leaf removal is carried out in the bunch zone for this particular grape varietal in December to allow for enough sunlight to the bunches to prevent any green flavours in the wine. The Cabernet Franc bunches, therefore, are a mirror for the sun.&lt;/p&gt;
&lt;h2&gt;‘The Lift’ NV Chenin Blanc&lt;/h2&gt;
&lt;p&gt;&lt;em&gt;“I want wine to challenge me; it can’t be one dimensional; it has to be multifaceted. The beauty of this career is that you can never stop learning. It humbles you so much so.” &lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;img class="alignleft" src="/media/cache/81/6f/816f5d29d6a76c123a35bdbb36b75444.jpg" alt="" /&gt;&lt;/em&gt;Need an idea of what Jocelyn’s &lt;a href="https://hoganwines.co.za/product/hogan-the-lift-nv-case" target="_blank" rel="noopener"&gt;latest release&lt;/a&gt; is like? Here’s an indication: &lt;em&gt;“Already half of it [The Lift] is gone from my pre-release tasting.”&lt;/em&gt; This new Chenin was as a result of an experiment - gone very right. It was a biologically aged wine under Flor, a film of wine yeasts commonly used in Jerez, Andalucia. It went through a process whereby the Flor Velum yeast &lt;em&gt;“feeds off alcohol and glycerol and also consumes some of the volatile acidity formed by a bacteria, creating a fresher, lighter wine, leaving a crazy umami concentration." &lt;/em&gt;&lt;/p&gt;
&lt;p&gt;50% of this wine was aged under Flor yeast, while the remaining wine came from an experimental barrel filled with previous vintages of Chenin sourced from the same vineyard as the Flor wine, the famed Swartland region. As per usual, there’s a song behind this wine inspired by the Flor yeast lifting. If you look on the back label here, you’ll see the lyrics from San Francisco by Scott McKenzie, pertinent to the process this wine has gone through.&lt;/p&gt;
&lt;h2&gt;Mother Culture In The Cellar&lt;/h2&gt;

&lt;p&gt;Jocelyn is now creating her own mother culture in the cellar. She’s got her own Flor yeast, but she’s also introducing her children to life in the cellar.&lt;/p&gt;
&lt;p&gt;&lt;em&gt; “They’re doing punch-downs with me. Speaking their thoughts to flavour profiles, which is something I work hard on with them. They want to be involved and tell me what they’re smelling, and while there are some days where I feel like I’m not coping [with juggling motherhood and growing a brand], there are euphoric months too. I’ve had some great achievements, but it’s not just about the awards. Having my first bottle of Chenin and seeing it right through, to my first 3-Star Michelin listing in Cologne, Germany, was a big moment for me."&lt;/em&gt;&lt;/p&gt;

&lt;p&gt;At the beginning of the year, fittingly around Valentine’s Day, the vineyards in South Africa are bursting with fruit. Winemaking teams are up before dawn, checking, testing, waiting. Once the grapes are at optimum sugar levels, it is time for harvest. Due to the boutique nature of Limoenkloof, everything is done in a very personal manner. The same winemaker has been with us from the very beginning, Van Zyl du Toit, and he ensures that each vintage reflects the terroir of the Simonsberg region.&lt;/p&gt;

&lt;p&gt;Each grape is lovingly handpicked, with as little disruption to the vines as possible. The grapes are then hand-sorted for quality, removing leaves and stalks and choosing only the best grapes of the bunch. They are then crushed to remove the juice, and the juice is placed into vessels for fermentation. This can take anywhere from a week to a month – or even longer! Once again: patience, patience, patience. As soon as the sugar is converted into alcohol, Van Zyl faces the tough decisions: which grapes will he blend, and how will they mature each wine?&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;Love Lives On - Even After a Fire&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Limoenkloof typically grew four grape varieties on the estate, namely Sauvignon blanc, Shiraz, Merlot and Cabernet Sauvignon. However, in 2016 a fire destroyed one of the Sauvignon Blanc blocks which was then replaced with Chardonnay in 2017. Once again patience, patience, patience and after we watched the vineyard grow- 2021 will be the first harvest of chardonnay and we cannot wait to share this new labour of love with you&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;There’s Nothing ‘Single’ About Our Single Varietals&lt;/strong&gt; &lt;/p&gt;
&lt;p&gt;Typically, Van Zyl opts for single-varietal wines as opposed to blends, as this results in more focused flavours, rather than the more generalised tasting profile of blends. These four varietals are arguably the backbone of South Africa’s wine industry; while the reds are made with intention of quality, ageability and longevity, the Sauvignon blanc is actually transformed into a very unique Champagne-style Méthode Cap Classique (MCC).&lt;/p&gt;

&lt;p&gt;Champagne and sparkling wines are known to be the wine of love. This is because of the beautiful marrying of the three grape varietals made in traditional Champagne, namely Chardonnay, Pinot Noir, and Pinot Meunier. The love between this trio is so strong that Champagne cannot be called Champagne if it includes any other imposing grape. The elegance and opulence of Champagne has inspired many a winemaker around the world to experiment with their own sparkling wines, and Limoenkloof boasts a Champagne-style sparkling wine made solely from Sauvignon blanc. As South Africans, we all love Sauvignon Blanc, so this MCC really is a match made in heaven.&lt;/p&gt;

Wykerd finds inspiration through the surroundings of the vibrant city by documenting each and every detail with sketches and incredible colour schemes. The sharp geometric lines of the cityscape are juxtaposed with De Zeven’s softer hues and curves - especially noticeable when you look outside at the surrounding natural vistas.&lt;/p&gt;

&lt;p&gt;The Pool Rooms at De Zeven greet you with the self-interpretive work of Elise MacDonald, who specialises in the merging of fantasy and realism. MacDonald allows her work to transform and expose itself, layer by layer, with her eccentric use of colour. The meticulous detail of the flowers and birds bring a sense of photographic vividness to the surreal tone of her paintings, which create a beautiful narrative as enigmatic as the natural charm encompassing the lodge.&lt;/p&gt;
&lt;h2&gt;Liffey Joy&lt;/h2&gt;

&lt;p&gt;Cape Town-based Liffey Joy’s monochromatic abstract works compliment Room 4 with their natural and metallic tones. Going back to her roots of experimentation, Joy paints with an absolute expression as she explores new ways of relating colours to materials like ink, acrylic, wine, potassium permanganate, and Epsom salts. Her work is referred to as “planned chaos” as the textures from these materials create a magical feel within organic parameters.&lt;/p&gt;

Not because we see our lodge basking in the African sun, but rather we're reminded of the beauty of our nation thanks to the many proteas dotting our surroundings.&lt;/p&gt;
&lt;p&gt;South Africa's proteas have become one of our greatest exports – and we're not talking about cricket. They're often used in bouquets thanks to their regal beauty, turning brides' dreams to more than just a reality – but instead, exceeding their expectations. They're celebrated the world over in décor and design, and while internationals fly them in, we're lucky to have them quite literally on our doorstep.&lt;/p&gt;
&lt;h2&gt;The Flowering Potential of Our People&lt;/h2&gt;
&lt;p&gt;So, where did it all begin for these prolific flowers? In 1976, the King Protea was declared South Africa's national flower, appearing on our coat of arms. Still, many of its smaller – yet equally beautiful - family members flourish in the Cape Winelands, with many calling De Zeven their ‘home.'&lt;/p&gt;
&lt;p&gt;Proteas are synonymous with resilience, strength and the ability to adapt and overcome the most inhospitable and testing of conditions. These are all characteristics that resonate with our culture, values, and what it means to be a South African. According to our government, the protea represents the &lt;em&gt;"flowering of our potential as a nation,"&lt;/em&gt; - a sentiment which rings truer now than ever before.&lt;/p&gt;
&lt;p&gt;With wildfires a common occurrence in this part of the world, proteas rejuvenate and regrow, irrespective of the damage done. The protea inspires us, and we firmly believe that we will get through this testing time, both as a nation and an industry that shows off the very best of South Africa to the world - much like the protea.&lt;/p&gt;

This low-maintenance plant would suit those who haven't been blessed with green fingers as it pairs well with succulents.&lt;/p&gt;

&lt;p&gt;In honour of the late President, Nelson Rolihlahla Mandela, the King Red Madiba Protea is one of the most vibrant flowers found and is also one of the most highly sought-after proteas in the world. It tends to flower from July through to September – just in time for Heritage month. Much like Mandela's tenacity and resilience, King Red Madiba Proteas can withstand some of the most testing conditions.&lt;/p&gt;

&lt;p&gt;For some, running a brand named after yourself could be perceived as somewhat self-indulgent. Still, once you get to know Erika, you'll immediately warm to her gentle nature and realise that she has done far more than just earn the right to name her wines Erika O - it would be sacrilege if she didn't.&lt;/p&gt;
&lt;h2&gt;Humble Beginnings&lt;/h2&gt;
&lt;h2&gt;&lt;img class="aligncenter" src="/media/cache/a0/be/a0bee1e1aa81e72649e5ccce7508890c.jpg" alt="" /&gt;&lt;/h2&gt;
&lt;p&gt;Born in the town of Sutherland, best known for its telescope and winter snow - and not much else - Erika grew up on her family's sheep farm in the arid Karoo. She fondly remembers spending hours exploring the veld with her canine companion, enjoying the simple pleasures of farm life, which explains why nature has always been in her blood. She says, &lt;em&gt;"a lot of what I am today, and my winemaking was imprinted in Sutherland, because I had this amazing connection with nature, thanks to the rawness of the Karoo."&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;While growing up in a small town in the Northern Cape is certainly not the worst thing to happen, Erika's most significant challenge came from something she had no control over. Since childhood, she has suffered from a progressive eye disease called Keratoconus. Her round cornea gradually bulged into a cone-like shape until her vision became so distorted that she was forced to get a cornea transplant to regain her sight. This meant that for the majority of her illustrious career, she had limited vision until 2016 and 2018 when she underwent two cornea transplants.&lt;/p&gt;
&lt;p&gt;With a lack of depth perception and disappearing sight, Erika still went hiking in the Helderberg Mountains. She would often need help navigating her way around the cellar with all its staircases and equipment. While her sight was failing, her heightened senses and meticulous memory helped her create wines that won her many accolades. Yet instead of talking about them, she brushes them off with, &lt;em&gt;"for me, it's about having people enjoy the product, rather than the product's status."&lt;/em&gt;&lt;/p&gt;
&lt;h2&gt;"There's No Point in Anything in Life if it Doesn't Make You Happy" – Mr Graham Beck.&lt;/h2&gt;
&lt;p&gt;&lt;img class="aligncenter" src="/media/cache/d7/67/d767fb5c4be5ec395b3e98ac98d04a4c.jpg" alt="" /&gt;&lt;/p&gt;
&lt;p&gt;Her career started at Kleine Zalze before she was chosen by Mr Graham Beck himself to become the winemaker behind the brand's still wine range, a position she held for twelve years. As a woman in a male-dominated industry with a reluctance to change, Erika only has praise for the men she has worked alongside. She holds fond memories working with Graham Beck and his wife, with whom she shared a close bond up until they passed. She recalls Mr Beck's motto of, &lt;em&gt;"there's no point in anything in life if it doesn't make you happy"&lt;/em&gt; – and says this is something that has stuck with her wherever she goes.&lt;/p&gt;
&lt;p&gt;Working in Franschhoek at Graham Beck's cellars was something that made Erika content with life. &lt;em&gt;"I was so in love with my job, and it came through when I started winning awards. I remember locking the cellar every day and looking at the mountains, thinking, someone pinch me. I poured everything into my wines."&lt;/em&gt; After just a year of working there, Mr Beck told Erika, "I want you to start your own wine label,&lt;em&gt;" something she says "was so visionary of him, and at the time I said 'no, that's crazy! I love my job.'"&lt;/em&gt; However, all good things must come to an end. When Graham Beck stopped producing still wines, Erika lost her cellar home and realised that she needed to find what makes her happy again.&lt;/p&gt;
&lt;h2&gt;Losing Sight&lt;/h2&gt;
&lt;p&gt;By 2016, Erika had hardly any sight in her left eye and only a little bit more in her other. She couldn't drive, had no real idea of what to do, as her future in wine was uncertain under the Graham Beck brand after Mr Beck's passing. She had to move out of her cellar, which she recalls &lt;em&gt;"was like a divorce, and I had to give up everything I had worked for. It felt like the carpet had been pulled from underneath me."&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;img class="alignleft" src="/media/cache/05/a6/05a6ccb701ca5ab21fbcfebf83363221.jpg" alt="" /&gt;From award-winning female winemaker to someone who barely resembled her old self, Erika had lost sight of the person she once was. You must realise that this is the same woman who introduced herself to Johan Rupert - one of the most intimidating men in the world - with, &lt;em&gt;"Hello, I'm Erika, and I'm the most beautiful girl from the Karoo."&lt;/em&gt; She had lost her identity and struggled to find her calling of what to do next.&lt;/p&gt;
&lt;p&gt;Graham Beck's words of, &lt;em&gt;"I want you to be happy"&lt;/em&gt; kept running through her mind. She realised that she had to get her life back, even if it meant taking a step into the unknown and starting her own wine label. Without a cellar home, without her own vineyards, without her sight initially, and with everyone telling her to stop making wines, Erika persevered, sourced grapes, and launched Erika O wines. She also had her first cornea transplant in between this all. After her surgery, she nearly lost her eye and her recovery of an estimated seven months turned into two years and many operations later.&lt;/p&gt;
&lt;p&gt;Yet during this time, she still managed to create wines using varietals and blends that she truly loved and believed in. She was no longer producing commercial wines, she was making wines of her own, wines that were &lt;em&gt;"a reflection of the vineyards and farmers behind it."&lt;/em&gt; The world noticed - even though Erika didn't expect it to.&lt;/p&gt;
&lt;h2&gt;&lt;em&gt;"Success is Bred by Focusing on the Smaller Things"&lt;/em&gt; – Erika Obermeyer&lt;/h2&gt;
&lt;p&gt;&lt;img class="alignleft" src="/media/cache/67/74/67744b5b46daf8d3f7d7e6dc1fc29376.jpg" alt="" /&gt;Towards the end of 2018, she attended the 2019 Platter's awards feeling insecure and recovering from her second eye surgery. She had isolated herself from the industry so much so that people were visibly shocked to see her. A few days before the event, she questioned if she had done the right thing and asked God for direction on whether or not she should carry on. Luckily, the Platter awards were the sign she needed after taking home the coveted '2019 Newcomer Winery of the Year,' and achieving two 5-Stars for her vintage debuts.&lt;/p&gt;
&lt;p&gt;Looking back, Erika reflects, &lt;em&gt;"I started hiking the Helderberg again, and as I approached each step I treated it as though it were a goal, a moment, an action that was taking me closer to where I wanted to be. I mimicked the heights of the mountain with my business and life goals. For me, success is bred by focusing on smaller things, because it all forms part of a puzzle that will eventually come together."&lt;/em&gt;&lt;/p&gt;
&lt;h2&gt;Home at De Zeven&lt;/h2&gt;
&lt;p&gt;&lt;em&gt;&lt;img class="alignleft" src="/media/cache/cb/2d/cb2d3b95687b4d19ea0fbee1f1431337.jpg" alt="" /&gt;&lt;/em&gt;Up until December 2018, Erika still had no permanent cellar space or venue to host wine tastings. While her rented farmhouse in the idyllic Banhoek Valley certainly had the views, it was no space to welcome guests. She needed a home where her wines could be enjoyed in the same way that they were made – looking at the mountains and reflecting on their natural beauty. To this day, Erika will not blend or even crush grapes if she doesn't have a view of nature or mountains to draw inspiration and energy from.&lt;/p&gt;
&lt;p&gt;After driving past De Zeven's gates every day, Erika decided to introduce herself to the woman who created this masterpiece, Siobhan Meyer. The two fellow entrepreneurs hit it off immediately, and naturally, De Zeven became the tasting room of Erika O wines. Since then, Erika has signed many importers and sold cases of wine from the comfort of De Zeven's lounge. &lt;h2&gt;What's Next&lt;/h2&gt;
&lt;p&gt;It takes an indomitable spirit and bold vision to do what Erika has done over such a short time, but she is still expanding her range of wines. Wine writer Janice Robinson summed up Erika's journey perfectly when she wrote, &lt;em&gt;"introducing a brand and wine without a history, an estate or heritage presents a unique challenge. It does, however, offer the opportunity to explore the wine's soul, its magical origins and the philosophy that brings all the elements of great winemaking together."&lt;/em&gt; Erika Obermeyer is a force to be reckoned with, and her love for what she does translates in the bottle. She has an aura of positivity and warmth that you can't help but gravitate towards, and we encourage you to meet her during your stay at De Zeven.&lt;/p&gt;
&lt;p&gt;In the future, she hopes to add a chardonnay to her range, saying, &lt;em&gt;"I would like to make a chardonnay which showcases the knife's edge between fullness and weightlessness. A chardonnay with both power and balance."&lt;/em&gt; As a female winemaker, Erika believes that there are some things that women can do better. &lt;em&gt;"We are very much more detail-focused and we can multi-task. &lt;p&gt;There are four variants in The Tempest Gin range, reflecting the signatures of all seasons. Most recently available are Autumn and Winter. A century prior, French cookbooks written for wealthy kitchens published recipes for carrot cake. There is nothing humble about the carrot cake. It is best suited for celebrations of the highest standard - like your wedding day.&lt;/p&gt;

&lt;h2&gt;De Zeven Carrot Cake Recipe&lt;/h2&gt;
&lt;p&gt;&lt;em&gt;Serves 12 slices&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;2 large eggs at room temperature&lt;/p&gt;
&lt;p&gt;175g molasses sugar&lt;/p&gt;
&lt;p&gt;200ml sunflower oil&lt;/p&gt;
&lt;p&gt;200g coarsely grated carrots&lt;/p&gt;
&lt;p&gt;225g cake flour&lt;/p&gt;
&lt;p&gt;1 tsp baking soda&lt;/p&gt;
&lt;p&gt;2 tsp ground cinnamon&lt;/p&gt;
&lt;p&gt;1 tsp grated nutmeg&lt;/p&gt;
&lt;p&gt;115g roughly chopped pecan nuts&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Method:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1.     Preheat oven to 190°C.&lt;/p&gt;
&lt;p&gt;2.     Beat the eggs using an electric mixer until well blended.&lt;/p&gt;
&lt;p&gt;3.     Add the sugar and oil before mixing well.&lt;/p&gt;
&lt;p&gt;4.     Add the grated carrots, sift in the flour, baking soda and spices, then add the nuts, before using a spatula to fold all ingredients together until just incorporated.&lt;/p&gt;
&lt;p&gt;5.     Grease and line a 20 cm cake tin with baking paper.&lt;/p&gt;
&lt;p&gt;6.     Spread the mixture into the prepared cake tin and bake in preheated oven for 40-50 minutes until the cake has nicely risen, firm to touch, and has begun to shrink away slightly from the edge of the tin.&lt;/p&gt;
&lt;p&gt;7.     Tip:  If you're not sure if it's ready, stick a knife into the middle, and if it comes out clean, the cake is ready to be taken out.&lt;/p&gt;
&lt;p&gt;8.     Cool in the tin until just warm, then turn out onto a cooling rack.&lt;/p&gt;
&lt;p&gt;9.     Tip: Place the cake in the refrigerator overnight in an airtight container, before icing.&lt;/p&gt;

&lt;p&gt;Finely grated rind and juice of 1 lemon (optional)&lt;/p&gt;
&lt;p&gt;3-4 tbsp icing sugar&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Method:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1.     Beat the cream cheese to soften it using an electric beater.&lt;/p&gt;
&lt;p&gt;2.     Add in the lemon rind and juice (optional step).&lt;/p&gt;

This exciting new art exhibition opened on 11 February and will be running until 30 April, transforming this old, historic town into a destination for multidisciplinary contemporary art from across the African continent.&lt;/p&gt;

&lt;p&gt;The Stellenbosch Triennale features installations, dialogues and film as a responsive medium to the shifting landscape of visual engagement. Artists are completely free to expand on these traditional visual art mediums in however way they want. Unlike most festivals in town, you won’t have to contend with traffic and limited parking as this exhibition is best enjoyed on foot, giving you time to reflect on the deeper messages and engage with different perspectives or narratives along the way. &lt;p&gt;Because it's February, we thought it apt to celebrate a few of the things our guests have mentioned loving about staying at De Zeven - and these are the things we love about our slice of paradise as well. With nature enveloping us from all sides, it's no wonder that its treasures play such a big part in our adoration of the valley, as well as our guests'. &lt;p&gt;Our chef sources fresh local produce and ingredients to create meals that are satisfying and packed with taste. Although we don't serve lunch or dinner - as we encourage guests to explore the numerous restaurants and wineries in the area - we pride ourselves on our breakfasts that are both nutritious and incredibly tasty. We also offer cheese platters on request.&lt;/p&gt;

We chose it based on the reviews, close proximity to both towns and the mountain views. Everything was perfect! The rooms are very comfortable. Ours had a view of the mountains and the pool. Comfortable beds and great bath products as well. The lodge is small but has a small family feel. Staff are very friendly, a delicious breakfast is served each morning with coffee, juices, fresh pastries, and a few made to order selections. Everything we tried was superb. The pool was relaxing each day after wine tasting. You can order a nice bottle of MCC or Rose Chenin Blanc from the bar or bring your own from one of the wineries and they gladly chill it down for you."&lt;/p&gt;

&lt;p&gt;Despite its extraordinary natural beauty, the Banhoek Valley over Helshoogte Pass outside Stellenbosch remains relatively unknown. Yet few regions in South Africa can claim such a rich and fascinating history, from the arrival of early settlers, slaves and farmers through to the present day.&lt;/p&gt;
&lt;p&gt;In this valley, some of the finest examples of early Cape Dutch architecture and buildings are contrasted with ultra-modern, enormously sophisticated wineries. In addition, some of the earliest villages established by freed slaves are a reminder of the country’s past, describes &lt;em&gt;Beautiful Banhoek&lt;/em&gt;, a book capturing the essence of this fertile valley created by Keith Phillips and Susan Hayden, and with an introduction by Cape Herstorian Tracey Randle. &lt;/p&gt;

&lt;h2&gt;Preserving the Banhoek Present&lt;/h2&gt;
&lt;p&gt;Today, a group of winemakers have collaborated to form a collective, called the Banhoek Collective, in an effort to showcase this unique area's wines and the accompanying valley. &lt;/p&gt;
&lt;p&gt;&lt;img class="aligncenter" src="/media/cache/1e/80/1e8052dfb539ffa96aee0e001cdc0d45.jpg" alt="" /&gt;&lt;/p&gt;
&lt;p&gt;Writes Malu Lambert of Port2Port: "You can’t talk about the Banghoek without mentioning its beauty. As I drive up Helshoogte Pass, mountain ridges and koppies swell and disappear like an ocean bearing current. Twists and turns reveal new views to be dazzled by, as the wine estates rise up amongst the rock and fynbos curves."&lt;/p&gt;
&lt;p&gt;&lt;img class="alignleft" src="/media/cache/70/aa/70aa7f0818680a98f16ccf091ebbf062.jpg" alt="" /&gt;In the collective are Bartinney, Capensis, Delaire Graff, Erika Obermeyer Wines, Hogan Wines, Miles Mossop Wines, Oldenburg Vineyards, Thelema, Tokara, Vuurberg and Zorgvliet. At a gathering of the collective, Lambert recorded the winemaker of Oldenburg, Nic van Aarde, saying: “This valley creeps into you. When I drove here for my interview, I was wondering if I was doing the right thing—leaving a big, established brand, to work at a smaller, boutique estate. I saw this view of the Rondekop [round mountain] and I was mesmerised. I knew instinctively then it was the right move.”&lt;/p&gt;
&lt;p&gt;Lambert also recorded Tokara's viticulturist Aidan Morton saying: "Banghoek is the coolest Wine of Origin ward in the Stellenbosch area." She then notes that the region's vineyards are planted at elevations of between 350m and 640m.&lt;/p&gt;
&lt;p&gt;Our neighbours at Bartinney, whom we often refer guests to, produce wines that have a cool-climate minty-ness. "If managed correctly," says Ronell Wiid, winemaker of Bartinney, "it becomes a fine characteristic of this region."&lt;/p&gt;

&lt;p&gt;Situated on one of the few smallholdings in the Banhoek Valley, De Zeven is just shy of 4ha of land that has seen a remarkable transformation since the Meyers (Uys and Siobhan) took ownership. The gently sloping property had little garden to speak of and required enormous landscaping to provide a foundation for what was to come. Soils were improved, compost trucked in, endless paving pulled up and retaining walls built to create the attractive terracing of the property.&lt;/p&gt;

&lt;p&gt;“When this property came up for sale there was nothing here, just an old farmhouse, but Uys fell in love with the view. I think he was excited to create another garden! It was my task to come up with an idea for using the property and one that made the most of these incredible views,” says Siobhan.&lt;/p&gt;
&lt;p&gt;&lt;img class="alignleft" src="/media/cache/b0/97/b0973d42e0c942b54b75f22efaeac0b8.jpg" alt="" /&gt;&lt;/p&gt;
&lt;p&gt;The Meyers then turned to Rentia Hobbs of landscaping consultancy Once Upon a Garden. For the past two years, Rentia has been closely involved with the award-winning South African displays at the annual RHS Chelsea Flower Show and she did a remarkable job of creating a living tapestry of water-wise flora on De Zeven’s bare site. “It was very much a blank canvas,” she explains. “From the beginning Uys and Siobhan wanted a low-maintenance garden that still contributed to the architecture and character of the property.”&lt;/p&gt;
&lt;p&gt;And that blend of heritage and contemporary architecture in the lodge is subtly reflected in the layout of the garden. “We have a little bit of everything, from cottage English to arid aloes to succulents and water-wise wild grasses that take up nearly half of the garden,” Rentia points out.&lt;/p&gt;

&lt;p&gt;"Sunrise is the moment when the upper limb of the sun appears on the horizon in the morning. The term can also refer to the entire process of the solar disk crossing the horizon and its accompanying atmospheric effects. Although the sun appears to "rise" from the horizon, it is actually the earth's motion that causes the sun to appear. Sunrise actually occurs before the sun truly reaches the horizon because Earth's atmosphere refracts the sun's image." - Wikipedia. &lt;/p&gt;

&lt;p&gt;Have you ever wondered why the sky lights up in pinks, oranges and reds during sunrise and sunset?&lt;/p&gt;
&lt;p&gt;"Air molecules and airborne particles scatter white sunlight as it passes through the earth's atmosphere. As a ray of white sunlight travels through the atmosphere to an observer, some of the colours are scattered out of the beam by air molecules and airborne particles, changing the final colour of the beam you see. Because the shorter wavelength components, such as blue and green, scatter more strongly, these colors are preferentially removed from the beam.&lt;/p&gt;
&lt;p&gt;At sunrise and sunset, when the path through the atmosphere is longer, the blue and green components are removed almost completely leaving the longer wavelength orange and red hues seen at those times. The remaining reddened sunlight can then be scattered by cloud droplets and other relatively large particles to light up the horizon red and orange." - Wikipedia&lt;/p&gt;

&lt;h2&gt;Tips for capturing the Sunrise at De Zeven&lt;/h2&gt;
&lt;p&gt;Rising with the sun is not everyone's cup of tea, but if you are willing to make the sacrifice, you might be duly rewarded with breathtaking scenes as the sun breaks over the Banhoek Valley.&lt;/p&gt;
&lt;ul&gt;
&lt;li&gt;Get up half an hour before sunrise, that's around 05:15am in summer, as the sun rises at approximately 05:45am.&lt;/li&gt;
&lt;li&gt;Find a comfortable spot to set up your camera, whether you have a tripod or not.&lt;/li&gt;
&lt;li&gt;Play with your settings, such as aperture, ISO speed and shutter speed. There is no right or wrong.&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;&lt;img class="aligncenter" src="/media/cache/49/66/496674181084e6955d8756f54fb7a517.jpg" alt="" /&gt;&lt;/p&gt;
&lt;p&gt;Nature TTL recommends the following: "An aperture of f/16 is going to work best for photographing sunrise and sunset scenes that feature foreground. The reason behind this is simple: it will allow as much of that scene to be in focus as possible. If your scene was a reflection, for example, and you didn’t have any foreground features, an aperture of f/7.1-9 will work better because you don’t require relatively close objects to be in focus.&lt;/p&gt;
&lt;p&gt;ISO measures the sensitivity of the image sensor in your camera to light. The lower the number, the less sensitive your camera will be to light. A higher ISO will result in grain and noise, lowering the image quality. For sunrise and sunset, a low ISO is going to be more beneficial in producing the best quality image.&lt;/p&gt;
&lt;p&gt;A slower shutter speed will allow you to convey movement, which can work well with clouds, lakes and rivers. Your shutter speed will vary throughout the time which you are photographing because of the light continually changing in the landscape. Generally, a sunrise or sunset shutter speed can be between 1/40 of a second right up to 30 seconds."&lt;/p&gt;

&lt;p&gt;The forerunners in colour trends, Pantone revealed the colours of the season for Spring/Summer 2019.&lt;/p&gt;
&lt;p&gt;The Pantone.com website revealed the following: "The mindset for Spring/Summer 2019 reflects our desire to face the future with empowering colors that provide confidence and spirit; colors that are uplifting; joyful hues that lend themselves to playful expressionism and take us down a path of creative and unexpected combinations. This season’s report features the top 12 stand out colors, as well as current takes on the four classic neutrals."&lt;/p&gt;
&lt;p&gt;As seen from the Pantone colour palette above, the vibrant colours of Fiesta, Jester Red, Turmeric and Living Coral are prominent, and variations of yellow and rich greens feature throughout.&lt;/p&gt;
